Best Pizza in Texas
I had a 4 day visit to Dallas, and lo and behold, found the best New York Style Pizza in the state! Giovanni's is located in the Historic Stockyards in Fort Worth, and is just a stone's throw from Billy Bob's Texas, the world's largest Honky Tonk. It is the real deal, owned by Jerry Giovanni, and scores a 100 on the Sliker Scale, as follows:
Thin Crust Pizza (40%)
Pizza by the Slice Availability (10%)
Large Slices (10%)
Traditional Pizza Ovens (10%)
Sicilian Pizza Availability (10%)
Run by Italians (10%)
Red & Green or Italy Theme or Name (5%)
Pizza or Pizzeria in Title (spelled correctly!) (5%)
And five stars out of five on the "Yummy Factor".
I also visited Roma Express, located at 1601 Main Street in downtown Dallas, just a few blocks from the convention center. It scored a 85 (no Sicilian, no Italians), but only 3 out of 5 stars on the yummy factor. I put it in the same class as mall pizza.

While NYPD is a VERY good
While NYPD is a VERY good pizza place, the location in the Dallas area falls far short of the great pizza you can get at their Florida (Metro West & Orange Ave) locations (the Park City, UT does great too). I used to throw pies for them in FL and something is missing from the pies in Dallas. I do admit it is very good for the area, but not as good as it needs to be.

On your recommendation, My
On your recommendation, My wife and I tried Giovanni's in Fort Worth today and I think you may be a bit generous in your 100% rating. While it was a good pizza, it certainly could not score as high on my scale. For starters, the pie was cut in 8 slices instead of the expected 6. OK, not that big a deal. The crust however was tasteless and limp. There was no crisp or flakyness and almost seemed undercooked. The cheese also had a good but non-expected flavor. Overall, I don't think an extra 3 or 4 minutes in the oven would hurt the pizza and may have have addressed some of its shortcomings but in the end I would rate Giovanni's at best a 75-80%.
